Grilling Evolution: Phase in BBQ Lemon Shrimp

For this Grilled Lemon Shrimp recipe, be sure to maintain even heat because the little crustaceans cook quickly.
BBQ Lemon Shrimp
- (8 skewers)
- 1# large shrimp! cleaned and deveined and dried
- 2 small zucchini or yellow squash
- 1 large sweet pepper (yellow , red or orange) sliced
- 1 clove minced garlic
- 2 tbsp butter
- 1 tsp lemon zest
- 2 tbsp lemon juice
- 1/4 tsp red pepper flake
Preparation: Cook zucchini or squash for 2 minutes in boiling salted water. Drain. Thread shrimp, peppers and squash or zucchini on skewers. Cook garlic in the butter and add lemon zest, lemon juice, red pepper flakes and salt.
Grill skewers for 5 minutes brushing with lemon butter. Turn and burgs again. Grill 5-7 minutes more or until firm.
