Recipe: Beefy Shells for Big, Beefy Men (CHOMP!)

After a brutal winter across much of the U.S., it’s been an unusually cool and wet summer. That means two things:

  1. The insipid global warming Al Gorians can turn twist it sideways and ram it.
  2. We need some recipes for indoors when we can’t get out and BBQ as we might like.

I’m including this very easy Beefy Shells Recipe. It’s easy to make and pasta is always a solid choice (unless your anti-carb at the moment or one of those whining Gluten-phobists). 

Ingredients:

  • 12 large shell pasta
  • 1 pound ground chuck
  • 1 tbsp olive oil
  • 1 cup Vidalia onion
  • 1/2 cup shredded carrot
  • 1/4 cup chopped celery
  • 2 cloves minced garlic
  • 1/2 tsp Italian Seasoning
  • 1 can diced tomatoes with garlic, basil and oregano
  • 1 cup shredded mozzarella cheese
  • 1 medium tomato, diced

Preparation:

Cook shells in boiling water until tender. Drain and cool

Brown ground chuck in the olive oil until browned (break up as meat cooks).

Combine onion, carrots, celery, garlic, seasoning and tomatoes in blender and blend until smooth. Reserve 3/4 cup of combined liquid.

Add remained to the cooled cooked burger and blend. Fill shells with burger mixture and top with reserved liquid.

Bake for 20 minutes at 350 degrees.

Top with cheese and diced tomato and bake for another five minutes.

Enjoy – while praying for sun.
