Labor Day BBQ Recipe: Picnic Potato Salad

It may seem overly traditional for some swinging cookouts, but there’s nothing more classic side dish for late summer cookouts than a little potato salad.

Since Labor Day is a classic American holiday, bringing a little of this all-purpose standby dish to any end of summer gathering is a safe and easy way to play the good host or the thoughtful guest. It’ll probably make your mom happy, too – because it’s the kind of thing her generation used to do accentuate the ham buns and coffee at church meetings.

Kids these days can scoff at Americana dishes like this salad, but the bowl will be empty when the party is over and autumn is upon us.

Picnic Potato Salad

Ingredients:

  • 3 pounds baby red potatoes
  • 1 tsp salt
  • 1 cup sour cream
  • 2 cups mayonnaise
  • 1 tsp garlic salt
  • 1/2 tsp pepper
  • 2 cups chopped celery
  • 4 hard boiled eggs
  • 4 green onions
  • 1/2 pound bacon, fried crisp and crumbled

Preparation: Cook potatoes in water and salt for 10 to 20 minutes. Do not over cook. Cool potatoes and quarter. Add first four ingredients and mix together. Add more mayo if needed. Add next four ingredients and mix again.

Refrigerate overnight. Serve.
