Get Your Guinness Out of the Oven with St. Patrick’s Day Scones

It’s the St. Patrick’s Day season, and you’re about to be bombarded with cocktail recipes to celebrate the season. There’s no avoiding that. There will be green cocktails, Irish Whiskey-based concoctions, Irish Coffee variations and scores of in-glass uses for Guinness.

None of that is bad. We’re always on the lookout for new tipples to celebrate the Roman turned Catholic Saint snakes fear the most. But, there is a way to take on your dose of Guinness without worrying about how it’s poured.

The minds behind Ava’s Cupcakes got into the spirit for St. Patrick’s Day and a night out an Irish pub with their Irish Soda Bread Scone with Guinness Glaze. You can try it yourself via the recipe below.

Irish Soda Bread Scone with Guinness Glaze

Ingredients:

  • 2 Cups All-Purpose Flour, sifted
  • 1/2 Cup Sugar
  • 1 Teaspoon Baking Soda
  • 1 Teaspoon Cream of Tartar
  • 1/2 Teaspoon Salt
  • 2 Tablespoons cold Butter
  • 1 cup Heavy Cream
  • 1 egg, room temperature
  • 1/2 cup Raisins (optional)

Glaze Ingredients:

  • 1/2 Cup Guinness Stout
  • 1/2 Cup Powdered Sugar

Scone Directions:

  • Combine dry ingredients. Cut in butter until crumbly.
  • Combine wet ingredients, add to dry mix until incorporated.
  • Place dough onto floured surface, gently knead into a flat disk, cut with cutter or into pie shaped pieces.
  • Bake for 12-15 minutes at 350 degrees.

Glaze Directions

  • Pour stout into saucepan over medium heat and reduce by half.
  • Add sugar.
  • Remove from heat.
  • Blend until smooth.
  • Pour heaping teaspoon over each cooled scone.
  • Allow a few moments to dry and serve
